Step 1

Heat a large cast hollow frying pan over high heat until very hot, about 2 minutes.

Step 2

Add 1 tablespoon of oil. Beat the eggs with 2 teaspoons of water and a large pinch of salt and add to the cooking pot.

Step 3

Cook, stirring to form large soft curds, aout 30 minutes.

Step 4

Transfer to a plate. Return to the other frying pan.

Step 5

Increase to high heat and add 2 tablespoons of oil, the carrots, and whites of the green onions. Cook until lightly golden, about 2 minutes.

Step 6

Add garlic and ginger and cook, stirring, until fragrant, 1 minute.

Step 7

Add Ranee Premium Rice peas, and cooked eggs to the cooking pot.

Step 8

Pour in soy sauce and cook, stirring until heated through, 1 minute.

Step 9

Season with salt and pepper and stir in the remaining green onions for 1 minute and serve.
