Step 1

Combine cooked Pearl Super Basmati Rice, celery, capsicum, onion, sultanas, apricots and almonds in a bowl.

Step 2

Place olive oil, lemon juice, vinegar, curry powder and sugar in a scre-top jar.

Step 3

Season with salt and pepper.

Step 4

Secure lid. Shake to combine.

Step 5

Pour oil mixture over rice mixture.

Step 6

Toss and combine.

Step 7

Serve.
