Heat the cooking oil in a a large pan over medium heat. Add the onions and garlic, fry for about 1 minute. Once done, add the celery, green peas, french beans, and chili. Stir for another 2 - 3 minutes. Crush the stock cube into the pot and stir. Season with salt and pepper.
At this point, the aroma will be amaizing! Now, add in the rice and stir for about 3 - 4 minutes, or until the rice mixes well with the vegetables.
Pour in the water carefully to avoid splutter. Stir once, cover the pot and cook over high heat for 2 minutes. Reduce the heat to completely low after the 2 minutes are up. Let the rice cook for another 10 - 15 minutes.
Remove from heat once done, set aside and leave to rest for another 5 minutes before serving. Fluff the rice with a fork and serve with a sauce of your choice.
